Beef Stew

INGREDIENTS
500g diced beef (any variety good for stewing)
1 parsnip, chopped water or stock
1/3 shopped Daikon
2 Garlic Cloves
1 cob corn, de-kerneled
1 leek, sliced

1 bay leaf
2 carrots, chopped
1 tbsp Astragalus powder
Strip cut in pieces of Kombu Seaweed
1 tbsp Miso
1 tbsp Ghee
Optional seasonal veg

DIRECTIONS
Warm ghee in a pot, fry leek and garlic until glossy. In the same pot sear the outer layer of beef with salt and pepper on medium heat. Cover meat with water-stock, miso and astragalus. Bring to boil and simmer for 40 minutes. Add vegetables and a bay leaf and simmer until vegetables are cooked.

Options to serve with:
– Steamed green beans
– Cavolo Nero seasoned with salt and lime juice
– Soaked and rinsed Rice
– Spiral noodles.
